- Three glasses of yogurt
- Four onions
- A glass of rice
- Half a glass of cobs
- Five pieces of garlic
- Four hundred grams of green vegetables (leek, coriander, parsley and mint)
- Two hundred grams of minced meat
The steps for preparing Kurdish yogurt soup are as follows
First stage
At first, you should soak the cobs in yogurt for a few hours before cooking to remove the swelling.
Second stage
At this stage, peel and wash the onions and then cut them into slices. Then pour a little oil in a pot of the right size and add sliced onions after the oil is hot. After the onions become soft and glassy, add turmeric and fry with onions, and then add the soaked cobs to the pan and fry. Then add four glasses of water and lower the gas flame and close the pot so that the cobs cook well with gentle heat.
Third level
At this stage, wash the rice and put it in a pot with four glasses of water and let it cook with a gentle heat and glaze.
The fourth stage
Peel the garlic and pound it with some salt, pepper and turmeric. Add the pounded garlic and cooked cob to the rice.
The fifth stage
Now it’s the turn of vegetables for yogurt soup; That is, clean an equal amount of leek, coriander, parsley and mint, then wash and put in a colander to drain the water. Then finely chop the vegetable. Add the vegetable soup to the pot and leave the pot open and let the soup settle. Stir the soup during cooking so that it does not stick.
The sixth stage
During the time when your yogurt soup is ready, peel and wash the onion and then grate it and take the juice of the onion and mix it with minced meat, salt, pepper and turmeric and then prepare the meat of the meatballs. Roast the meat of the meatballs in oil and add them to the yogurt soup along with a fried onion at the end of the cooking.
